Vegetable Soup Empty Vegetable Soup

My own recipe and was delicious! Amounts are variable use up what you have in.
4 med spuds
3 carrots
3 sm onions
4 sticks celery 
1 sm turnip
I large courgette
1 garlic clove left whole
Squeeze of tomato purée
Few drops of Worcestershire sauce
1 capful of mushroom ketchup
1 veg stock pot
1 veg oxo cube
Approx 1000 ml of boiling water, add more if too thick.
Salt and pepper
Chop all veg into small chunks, sweat in a very small amount of olive oil for about 10 mins turning frequently.
Add stock and water.
Add purée, mushroom ketchup and Worcester sauce.
Simmer gently with lid on for 25-30 mins
Cool for 10 mins and Whizz till blended.

Snowy, I have just spent the afternoon making a huge pot of vegetable soup too,only difference is I don't blend mine which makes it more of a stew, I don't put garlic in or mushroom ketchup (good idea) and I also put sweet potato in mine.
I'm on a soup diet so guess whats for dinner?

Sounds good. thumbs up I've got a butternut squash coming thurs Eggy so guess what I'm making next week! I hate peeling them though!

Your soup sounds lovely Snowy. A bit different from mine so will try it. Have never tried mushroom ketchup.

I made soup with butternut squash a while ago - think it had red peppers, onions, ginger and something else which were roasted with the squash first. It was very tasty if a bit gingery.

I was once told that butternut squash did not need to be peeled for roasting but don't know for soup. Although saying that I have always peeled them whatever I was cooking with them.

They do need peeling Stylo. It's just such a tough skin.
I put ginger in mine too.

I make make a lot of soups , I'll try out your recipe Snowy it sounds good. I haven't tried putting Worcestershire sauce in soups . Haven't bought mushroom ketchup either.
I make  butternut squash soup with ginger too.

That's on of the only things I cant stand, Ginger unless its in biscuits

I have recently roasted butternut squash in the oven without peeling. It does work! I just halved it to get the seeds out and left it in the oven at about 180 c for about half an hour. I didnt make mine into soup just mixed it with other roasted veg and it was very edible! Really soft skin so I guess it would mix in in the whizzer. Give it a try for soup.......you will be surprised|!
