Gently spiced cauliflower soup
This soup,is quick and easy but depends on two essential items
Pataks curry paste not sauce
Maggi coconut powder. You can use coconut milk but it can be fattening and I tend to think of this soup as a good flavoured weight watchers version.
It serves 4
I chop all the leaves and stalk from a cauliflower and some broccoli stalks and just a couple of florets of Cauli too.
Boil in stock or water until soft.
Liquidise the whole lot and add half a teaspoon of curry paste.
Mix some of the coconut powder with water to make a "milk"'and add to soup.
Give it all a good stir and you will have a gently curry spiced soup with a tang of coconut too.
I also make this using a whole,butternut squash with the same flavourings.

I found the coconut powder in somewhere like Home Bargains.
I have just made this with a new cauliflower and it is really good although it looks like I am asking you to make something with scraps!

Unbelievably, I was only thinking of looking up a recipe for cauliflower soup recently.
Is there any reason why you don't use more florets?

No Kate, you,could use them all if you wish. I just like to use up all the Cauli leaves and stalks rather than throwing them away. There is easily enough substance and flavour without using the florets.
By the way, Nigella swears by roasting cauliflower,florets!?

I made this today. I did it with a whole cauliflower and I used a tin of coconut milk and I put in more curry paste and it was delicious.
I shall be making it with butternut squash next.
