Homemade Potato Salad

New potatoes, scraped, and cooked till soft. Amount up to you.
1/2 - 1 onion finely chopped
1 -2 sticks of celery chopped
1-2 eggs hard boiled and chopped
Mayonaisse 2-3 dessert spoonfuls
1/2 - 1 Dessert spoon Yellow Mustard ( I use the American Squirty kind in this)
Toss all together and place in serving dish.
Fresh Chives scissor cut on top.
The quantities are really up to you and depending on how many you are doing it for, you can't really go far wrong.
Actually another little tip is to pour a little Italian dressing over the potatoes and let them marinate for a while then put the rest on, it give it all a bit of a tang, and is really nice.

Sounds lovely Snowy. A lot of potato salads are quite 'claggy' & boring but yours sounds yummy. Will give it a try.
