Broccoli timbales (Italian recipe)
Serves 8
1 large head of broccoli
1 egg
2tbsp grated parmesan
50 mls double cream
salt and freshly ground pepper
1/4 tsp grated nutmeg
Preheat oven to 180/350/gas mark 4
Grease 8 x 50 ml moulds very generously with butter. Line base of mould with little circle of baking parchment.
Cook the broccoli until al dente. Drain and refresh with iced water to keep the colour.
Add all other ingredients and process into a coarse puree (no stalks/lumps)
Spoon mixture into prepared moulds and put in roasting pan. Pour enough hot water into the pan to come 2/3 of the way up the sides and bake in oven for 20 minutes until set.
Parmesan cream sauce:
100 mls double cream
3 tbsp grated parmesan
salt
Gently warm the cream, stir in the parmesan and warm thoroughly until cheese has melted. Season.
The broccoli timbale was turned out of the mould, served with this sauce pooled around it with a rasher of crispy pancetta and 3 large grilled prawns.
Obviously this could be served without the sauce, just as a veggie accompaniment.

Thank-you for this Gill. My GS is not a meaty eater but loves his leafy greens with Broccolli being his favourite.
