Spinach Fritata
1 Tbsp Olive Oil
Red onion finely chopped
Garlic clove chopped
Red Pepper chopped )
2 Portabello Mushrooms chopped) I added these two extra vegetables
Bag of Spinach, wilted and chopped
8 eggs whisked with 2 Tsps Milk and 1/3cup of grated parmesan
Fry onions, add garlic, then add the red pepper and mushrooms and continue till cooked add the wilted spinach (we steamed it) and spread over pan.
Pour over the whisked egg mixture and cook on top of the stove, finishing off under the grill until golden brown on the top. Just check the middle is cooked before serving.
Serves 4 for brunch or 2 for dinner.

Sounds lovely - shame OH doesn't like omelette. Would this work for one Snowy?

It's rather big as it stands for one Madge, but you could cut the quantities down to suit.
It was really nice, and filling, and worked fine with our added mushrooms and pepper.

Anything with spinach and mushrooms gets my vote. Love fritatta's - leftovers are perfect for lunch next day!

Sounds good Snowy. Like Elsie anything with spinach gets my vote too. And although OH is not too keen on cooked spinach (only in salads) he does love omelettes so will give this a go.
