Very quick crumble.
I know a crumble is a very easy pudding with lots of variations, but I thought this was a very clever quick way.
Any cooked fruit in 4 ramekin dishes.
Bash 160 gms shortbread fingers with end of a rolling pin, leaving a few chunky bits.
Melt 30gms unsalted butter and stir in crumbs.
Put on top of fruit and bake at 180 degrees.
That's it!

I have prepared it as a second pudding for family lunch tomorrow.
You could increase it to make a bigger one too.
