Iced Lemon Terrine. Empty Iced Lemon Terrine.

I loaf tin, double lined with clingfilm.
200 gms Madeira cake
50 mls Limoncello
300mls double cream
150 gms icing sugar
Zest and juice of 1 lemon
160 gms lemon curd
3 meringue nests, crumbled

Cut cake into 1cm slices and pack into bottom of a loaf tin, that you have lined with a double layer of clingfilm, leaving a lot hanging over the sides.
Soak with Limoncello.
Whip cream, icing sugar, lemon juice and zest until thick..
Layer cream, lemon curd and meringue, finishing with another layer of cream.
Swirl lemon curd through with a skewer.
Fold overhanging clingfilm over the top and freeze.
Take out of freezer about 10 mins before serving.

I got this recipe from Flutterby ( RIP) and everyone I've passed it to has it as a 'go to' recipe now!

I love thé sound of this Kate! I must have missed it before, as you say great to have ready in the freezer…

Only this week I was looking at this microwave recipe for lemon curd, so quick!

Sorry, I omitted to say you have to line the loaf tin with clingfilm, leaving it hanging over the sides. I have added it now.
